Lavender is special. Some people love it, some can’t stand it. But there is a great probability that sometime in you life you would be simply stunned by it. Either by the smell, either by the beautiful sight of lavender bushes in the sunrise. Or by a magic combination of smell and taste in a meal or a drink. The best and easiest way to do this is to prepare a lavender syrup. Then you can use it to prepare all kinds of dishes and drinks. Naturally, fancy lavender cocktails are always a good idea. Below is the recipe for the syrup, together with my favorite uses for the syrup.
Lavender syrup recipe
- 500 ml water
- 200 g table sugar
- 2 handfuls (1 cup) of lavender blossoms
Mix sugar and water and heat up until all the sugar has dissolved. Turn of the heating, add the lavender blossom, cover and leave overnight. Separate the blossoms from the syrup with a sieve. Store the syrup in a well closed bottle.
Virgin Lavender fizz
- 1 spoon lavender syrup
- 200 ml Sparkling water
- Ice cubes Lemon slices
- Fresh mint leaves
- Lavender flowers for decoration
This is a simple, non-alcoholic summer drink. Naturally you can also use it during the winter to remind you of sweet summer days. Lemon slices are a must, since they add a hint of acidity to freshen up the taste. Just mix the syrup, water, lemon slices and ice cubes. Add mint leaves and – optionally – lavender flowers. Enjoy!
Lavender fizz
This is a simple alcoholic drink that expands the taste range of non-alcoholic version. You can add just a small amount of alcohol to impact the taste while the drink is still safe to drink in larger quantities. The rum adds a nice wholnes of the body whereas wodka does little in the way of taste. Just mix the syrup, rum (or vodka), water, lemon slices and ice cubes. Add mint leaves and – optionally – lavender flowers.
- 1 spoon lavender syrup
- 5-50 ml white rum or vodka
- 200 ml Sparkling water
- Ice cubes
- Lemon slices
- Fresh mint leaves
- Lavender flowers for decoration
Lavender Hugo
This is a version of the famous drink made with elder syrup. This one is sweeter and has – naturally – a lavender hint. If the original drink is already too sweet for you, skip this one. And if the lavender taste is too strong, add some more wine or sparkling water. Just mix the syrup, wine, water (optionally) and ice cubes. Add mint leaves and enjoy!
- 1/2 spoon lavender syrup
- 200 ml of sparkling wine
- Optionally 100 ml of sparkling water
- Ice cubes
- Fresh mint leaves
Lavender brownies
For the end, something sweet.
- 110 g flour
- 2 pinches of salt
- 2 eggs
- 220 ml Nutella
- 100 g brown sugar
- 110 g butter
- 1 spoon of lavender syrup
- Lavender flowers for decoration
Mix eggs, nutella, brown sugar and lavender syrup. Add flour, salt and melted butter and mix until a smooth and uniform mixture forms. Pour in a greased pan. Preheat the oven to 180 C and bake for 15 minutes. Allow the brownies to cool and cut them up. Additionally lavender flowers can be sprinkled on top around 5 minutes into baking. Just for the impression to go with the lavender taste.
