Ice cream is my favorite dessert. So smooth, cool and with more flavor variance that you can think of. And there are tons of simple recipes that you can whip out in seconds to treat yourself and your friends. I know the internet is full of simple, “only two ingredients” recipes, but trust me, these are even simpler. With the added bonus of dairy free option if you choose so. Just exchange the whipping cream for a plant-based whipping cream!
The basic idea is simple: blend frozen fruits with whipping cream or plant-based whipping cream and you’re finished. From here on only your imagination is the limit for heavenly tastes and wild combinations that you create. As an added bonus, this ice cream can be frozen and you can enjoy it whenever you want. Just make sure you put it in the freezer before it melts, so it stays smooth and soft. Below are some ideas to start your journey into the ice cream flavor universe.
Strawberryice cream
First a simple one. Just add frozen strawberries to the blender, pour cream over them and blend. You can easily buy frozen strawberries in a supermarket or just freeze fresh fruit yourself. The ratio is about 3 cups of fruit per one cup of cream. If you want a more firm texture, add more fruit. If you want a more liquid and smooth texture, add more cream or milk. So simple and so deliciously smooth.
Raspberry mint ice cream
This is comparable to the strawberry, but with added mint leaves. I really like mint, so I add lots of them – about 8 leaves per cup of raspberries. And the taste is superb. First the refreshing, slightly sour taste of raspberries, which slowly fades away and is replaced with the freshnes of the mint. And the nice thing is that this aftertaste lingers for quite some time, with gentle hints of raspberry. Decorate with fresh mint leaves – guaranteed success!
Banana and elderflower ice cream
This one has only three components, but a taste that can rival the most complicated creations. Take two or three sliced and frozen bananas and blend them together with 50 ml of cream and 50 ml of elderflower syrup. For the elderflower syrup check my article about syrup making. The texture and consistency of the ice cream can be adjusted with bananas or whipped cream. The end result should be a smooth, full bodied ice cream with notes of late spring. And wait for the aftertaste, this is truly a cherry on the top. Simply magnificent! Definitely worth a try.
